Cauca coffee is grown in small plots by rural, indigenous and Afro-descendant communities, in 34 municipalities, which house more than 90,000 families who grow 93,000 hectares of Arabica coffee of the Castillo, Colombia, Caturra, Typica, Bourbon and Tabí varieties.
Since August 10, 2011, our coffee has ‘Denomination of Origin’, defining as a coffee with a very strong and caramelized fragrance and aromas, which has a high acidity, medium body, balanced global impression, clean, soft with some sweet and floral notes.
Made up of 43,000 coffee families in 11 municipalities in the center of the Department that include the Popayán Plateau, belonging to peasant communities, Afro-descendants and indigenous Nasas and Misak, cultivate about 44,500 hectares of coffee, characterized by their high technification and productivity. They are cafes considered high because on average they are located at 1,700 meters, cultivated in soils derived from volcanic ashes, sun and semi shade. Its cup profile is characterized by a pronounced fragrance and aroma, medium high acidity, medium body, balanced cup, with caramel and floral notes.
Coffee with roots
17,000 families from eight municipalities inhabited by Afro-descendant, Nasas and mestizo communities, located in the mountains of the north of the Department, whose climate contrasts between cold temperatures and warm winds from the geographical valley of the Cauca River, are responsible for producing the Café del North. This coffee is grown and harvested in 12 municipalities, by 22,000 Yanaconas peasant and indigenous families, who with principles of sustainability take care of our greatest wealth ‘water’, because the main rivers of the country (Cauca, Magdalena and Caquetá) are born here; The coffee area amounts to 21,000 hectares.
Its topography, height and temperature contrast translate into a coffee that is characterized by its sweet, pronounced fragrance and aroma; high acidity, medium body, balanced cup, pleasant residual taste, with the presence of chocolate, fruit and citrus notes.
In this region, coffee is cultivated and harvested by 8,500 families and peasants in two municipalities in the eastern part of the Department, with a coffee area of 8,500 hectares nestled in the central mountain range with soils formed by large volcanoes.
